Tasty Recipes To Try At Home – from Zesty Catering 21 May 2020

KOREAN FRIED CHICKEN

INGREDIENTS:

500g chicken wings

150g of dark brown sugar

1 tbsp soy sauce

2 tbsp of gochujang (Korean chilli paste, Waitrose stock it)

50g cornflour

3 large cloves Garlic chopped

40g of Ginger chopped

1 tbsp Sesame oil

Spring onion for garnish

Sesame seeds for garnish

METHOD:

In a saucepan add the sugar, soy sauce, sesame oil, garlic, gochujang and half of the ginger. Cook on a medium heat until the sauce is bubbling and sticky. Take it off the heat and set aside. Toss the chicken wings with the rest of the minced ginger and cornflour. Pan fry them in hot oil for approx. ten minutes, until they are golden and crispy. Set on kitchen paper for a minute to soak up any excess oil. Coat the fried wings in the sticky sauce. Garnish with sliced spring onion and toasted sesame seeds.

 


EASY NO BAKE CHOCOLATE ORANGE CHEESECAKE

INGREDIENTS:

200g of Bourbon biscuits

100g butter

2tbsp of soft brown sugar

2tsp of cocoa powder

200ml of double cream

200g of orange chocolate (Terry’s dark, or Lindt Orange work well)

200g of cream cheese

150g of golden caster sugar

Terry’s chocolate orange for garnish

METHOD:

Grease and line a suitable tin (ideally springform). Crush the bourbon biscuits, either in a food processor or by putting them in a sandwich bag and smashing them. Melt the butter with the soft brown sugar, then pour into the crushed bourbons. Mix it well, then press into the bottom of the greased up tin. Place in the fridge whilst you prepare the cheesecake mix. Melt the chocolate in a heatproof bowl over a pan of simmering water. Whip the cream to soft peaks, the fold through the cocoa powder. Whip the cream cheese with the sugar, the fold this through the whipped cream/cocoa. Fold the melted chocolate through. Pour the cheesecake mix over the biscuit base, smooth it out into all the corners/edges. Garnish with ‘Terry’s Chocolate orange’ pieces. Place in the fridge for at least four hours for it to set!
